While cooking in my kitchen I value the simplicity and time saving whenever I can. That’s why, when I don’t have much time I enjoy preparing salads, which are nice for a change when it comes to our daily menu. Today, I’d like to recommend you one of them, namely a crab sticks and rice noodle salad.
Ingredients:
- 1 packet of rice noodle
- 1 packet of crab sticks
- 1 tin of sweetcorn
- 1 long cucumber
- 4 boiled eggs
- chives/parsley
- 2-3 dill pickles
- 2-3 spoons of mayonnaise
- 2-3 spoons of thick natural yogurt
- 2 cloves of garlic
- salt
- pepper
- sugar
- a pinch of chili pepper

Preparation:
Prepare rice noodle according to the instruction on its packet. After boiling cut it into smaller pieces. Cut the crab sticks. Drain the sweetcorn on the sieve and add it to the bowl. Peel the cucumber and dice it, dice dill pickles. Boil the eggs, peel them, and just like in the case of cucumbers and pickles dice them finely. Mix everything carefully. Add all the sauce ingredients to the salad: mayonnaise, yogurt, salt, pepper, sugar and a pinch of chili. Mix everything again. You can place the chive or parsley at the top of the salad or you can mix it with the rest of the ingredients. In the picture you can’t see the dill pickles and chili pepper, as I added them later, since I like more distinct taste than the one of the original salad. Bon Appetit!
