There are some flavors that we keep remembering for a long time, and when we happen to remind ourselves of such an experience, we desire to recreate this mind-blowing recipe on our plates as fast as it is possible. I have also felt such a need, and it was related to hash browns, the ones which almost everyone likes, namely Hungarian hash browns, whose recipe you’ll find below.
Ingredients:
Marinade:
- 3 spoons of olive oil
- 1/2 teaspoon of sweet pepper powder
- a pinch of chili pepper powder
- 2 cloves of garlic
- 1/2 teaspoon of salt
- a pinch of pepper
- 1/2 teaspoon of goulash spice mix
Hungarian goulash:
- 700g of pork
- 300g of beef
- 2-3 spoons of oil
- 250g of mushrooms
- 1 red and 1 yellow pepper
- 1 big carrot
- 600 ml of stock or water
- 2 spoons of tomato concentrate
- 1 teaspoon of sweet pepper powder
- a pinch of chili pepper powder
- 2 cloves of garlic
- a few bay leaves
- some allspice
- 150ml of heavy cream (30%)
- 1 spoon of wheat flour
- 1 spoon of chopped parsley
- salt, pepper
- chopped parsley, dill, chives and grated hard cheese for decoration
Hash browns:
- 1,5 kg of potatoes
- 1 small egg
- 2 spoons of wheat flour
- 1/2 of a small onion
- spices: a flat small spoon of oregano, salt and pepper
Preparation:
Dice the meat. Mix all the ingredients you need for your marinade in the bowl, rub the meat with that mixture. Such prepared meat should be fried on a hot frying pan with some oil for about 5 minutes.
Wash and cut the vegetables into even pieces. Add them (mushrooms, peppers and a carrot) to the frying meat.
After the next 5 minutes of frying add some tomato concentrate, chopped parsley, sweet pepper powder, chili pepper powder, allspice, bay leaves, pressed garlic and pour everything with some stock or water. Cover the pan with a lid and roast the meat for at least an hour until it gets soft.
Next add heavy cream mixed with some flour to the roasting meat, add some salt and pepper to taste. Roast the meat under the lid for the next 5-10 minutes.
Wash, peel and grate potatoes. Follow the same steps with the onion. Add the egg, flour and spices to the bowl. Mix all the ingredients carefully.
Heat up the frying pan with some oil and fry your hash browns until they become gold. To get rid of the unnecessary fat, you can put the hash browns on the paper towel first. Next pour hash browns with some goulash, sprinkle with some grated cheese, chopped parsley, dill and chives. Bon Appetit!
