Easter is right around the corner, therefore we start our intense preparations for this special time. Besides the spiritual sphere, we shouldn’t forget about traditions, which are worth being preserved, regardless of your own believes, as they bond families and they give an amazing opportunity to spend free time together, as well as to do various things together with your dear ones. Decorating my home with festive ornaments or preparing the Easter basket have always brought a big smile on my face. Personally, I love Easter cooking, and especially my mum’s baked goods. One cannot forget about Easter cake, which I’m going to present to you today, and which should definitely be present on the Easter table. I think you already know that works by Nun Mary, which I share with you eagerly, are a great source of culinary knowledge. Today’s Easter cake recipe also comes from one of the books of the earlier mentioned author.
Ingredients:
Dough:
- 3 eggs
- 1/2 bar of margarine
- 2/3 glass of sugar
- 2/3 glass of wheat flour
- 1/2 teaspoon of baking powder
- 1 lemon
Icing (optional):
- icing
- ready-made chocolate frosting
- grease
- breadcrumbs
Preparation:
Dough:
Blanch lemon, next grate the peel and juice lemon to a bowl. Separate whites from yolks. Beat whites until you get stiff egg white foam, at the very end of beating the whites add some sugar. While still beating add one yolk and gradually some flour earlier mixed with baking powder. Pour melted and cooled down margarine. At the end add some lemon peels and pour some lemon juice. Mix everything thoroughly.
Grease the baking tin and sprinkle it with some breadcrumbs. Fill the baking tin with the dough. Bake at 160-170°C for 35-40 minutes.
Icing:
Cream icing sugar with an egg white and some lemon juice. Pour the earlier baked Easter cake with the icing and decorate it with ready-made chocolate frosting.
Because of my own preferences I decided to resign from the icing in favor of icing sugar and cocoa. Bon Appetit!
