Autumn is a time in which I truly long for light summer dishes. A few years ago, I had a chance to visit Greece quite regularly and I fell in love with its cuisine, because of its delicate and healthy nature. At that time I warmed to eating vegetables, which hadn’t seemed to be too attractive to me before. One of such vegetables was zucchini, which I am truly fond of, as thanks to its neutral taste it gives lots of possibilities to any kind of cooks. Last week, I felt like cooking something tasty, yet simple when it comes to its preparation … in this way, I came across a recipe written by one of my favorite authors of cookery books – nun Mary, who proposed preparing zucchini in a slightly different way. Today I’d like to present you truly delicious and really well-seasoned stuffed zucchini, which will definitely please even the most demanding palates.
- 3-4 small zucchini
- 350 g of minced meat
- 1 spoon of tomato concentrate
- 1 teaspoon of mustard
- 1 teaspoon of Provence herbs
- 2 spoons of chopped parsley
- 1-2 cloves of garlic
- 100 g of cheese
- salt and pepper
Time of preparation:
- around 40 min
- for 4 people
Wash the zucchini and cut them into halves. Such prepared vegetables boil for 5 minutes in salty boiling water. Next take them out and put them on the plate. Hollow out your halves of zucchini. Add the remaining flesh to minced meat. Mix your meat and zucchini flesh with tomato concentrate, mustard, herbs and crushed garlic. To such a prepared mixture add some salt and pepper to taste. Fill in the halves of zucchini with your meat filling and sprinkle them with earlier grated cheese. Spread parchment paper on your baking tin and put your zucchini on it. Roast such prepared vegetables in the oven for about 20 min at 200°C. After taking zucchini out of the oven sprinkle them with chopped parsley.
My extra tips: you can add a little bit more herbs to your meat filling and sprinkle zucchini with some extra salt before filling them with meat.
