Time has been my greatest enemy for a few weeks now or to be more precise the matter which bothers me the most is its chronic lack. Despite this fact I always try to be active and I take part in various activities, even though I’m truly exhausted and my stress levels are significantly raised. This tension can be relieved only thanks to some everyday little pleasures, which are totally not related to my work.
As I’ve already mentioned quite a few times, I’m not a great cook myself. However, I sometimes enjoy spending my time on cooking even if it happens late in the evening, when most of you sail away into the world of colorful dreams or into a certain state of non-existence. This time I was encoured to try mself in cooking thanks to a new device I was given by my colleagues, namely a slow cooker. I still don’t know how often I’m going to make use of it, but the creamy cauliflower soup, which I had a chance to prepare in my slow cooker, turned to be really tasty.
Ingredients:
- cauliflower
- 1 onion
- 1 parsley root
- 1 liter of vegetable stock
- 200 ml of heavy cream
- 1 spoon of freshly grated horseradish
- 1 apple
- 50 ml of oil
Preparation:
Dice the onion and slice the parsley root. Glaze these vegetables on the frying pan. Next, put them in your slow cooker and pour everything with the vegetable stock. Add cauliflower, grated horseradish and a finely chopped apple.
Set the slow cooker on the high mode and cover the pot with a lid. After two hours of cooking press everything through the sieve, so that the soup gets smooth. In my case I decided to cook the soup a little bit longer, I prolonged the time up to one hour, I also used a blender instead of a sieve, as the cauliflower was still al dente. Next, add some cream and cook everything for the next 15 minutes (I cooked it for half an hour). Creamy cauliflower soup can be seasoned to taste if you need more flavor. Such a prepared dish can be decorated with parsley or some other favorite topping. Bon Appetit!
