Is there a single person who doesn’t like Mexican cuisine? As I’ve already had a chance to mention, I’m not the best cook and living on my own I don’t like spending too much time on cooking only for myself. There are recipes which are not only fast, but also difficult to destroy. Some time ago, I fell in love with a recipe for Mexican pancakes, which just melt in the mouth. Unfortunately, due to my limited time, and of course a little bit of my laziness – I decided to alter this recipe slightly and that’s the way pasta à la mexicana was born. Attention! It’s not a very accurate recipe, each time I prepare this dish differently, but it’s always very tasty, no matter what you add to it. Of course, you need to remember about the right proportions!
Ingredients:
- ½ kg of minced meat (you can use any type you like, I like mixed beef and pork)
- 1 tin of sweetcorn
- 1 tin of red beans
- 4 cloves of garlic
- 2 teaspoons of sweet paprika
- a pinch of chili
- 2 teaspoons of gyro spices
- 2 teaspoons of granulated garlic
- a mix of your favorite herbs (I add different ones each time I prepare this dish, the ones which are available at my home, for example: rosemary, thyme, mixed herbs)
- ketchup
- spaghetti
- parsley
- cheese (for example Gouda)
- olive oil for frying

Portions:
For 4 people
Preparation:
Fry your minced meat on the frying pan, I used two types of olive oil for frying (one with basil and one with chili). After a few minutes, when the meat is already fried add some pressed garlic. Next, fry everything for a few more minutes, adding water if necessary. Add spices and herbs and mix everything carefully. Add the rest of ingredients to the earlier prepared meat, which means sweetcorn and read beans, pour everything with ketchup to taste (you can also use tomato paste, but I personally prefer ketchup). In the photo you can also see some tomatoes, you can also add them, I had some left in my fridge. 🙂 Fry everything together for a few more minutes.

Boil spaghetti according to the instruction in slightly salted water. When your spaghetti is ready put it on the plate and pour it with à la mexicana sauce. Sprinkle everything with grated cheese. You can also decorate this dish with parsley. Bon Appetit!

I don't think it is possible for someone to not like mexican food! My husband is obsessed with it and we eat it at least twice a week. I'll have to see if he would be interested in making this.
I can remember when I was living on my own - I'm not a big cook and having no one else to cook for meant there was no real inspiration to push myself to do anything fancy or elaborate. Instead, I was always on the search for quick, easy meals that were healthy but with as little effort as possible lol I could definitely have seen myself embracing this - it looks like a perfect option! In fact, I might have to take and alter this slightly for my husband and I one night!
I wonder how that recipe would work with black beans, my son does not like red beans, but loves Mexican food, so that would be worth a try - blessings!
