At this present time, which is so difficult for all of us, there is a lot of talk about physical exercises and diets that could theoretically help us not only to stay fit, but also not to put on weight too much. I also try to take care of the way I nourish myself, bearing in mind the fact that I’m not as active as I would be in more favorable conditions. I would spend long hours walking around the classroom, which was just a substitute of a physical activity we need so much in our lives. However, at the moment, I lack even that, but from time to time I like preparing homemade baked goods, which are truly delicious and cannot be compared with the goods widely available in the supermarkets. I would like to present you a recipe for a peanut butter carrot cake, which I’ve recently found in one of the culinary books written by one of my favorite authors – Nun Mary.
Ingredients:
Pastry:
- 3 eggs
- ¾ cup of sugar
- 1 ½ cups of wheat flour
- 2 cups of grated carrots
- ½ of a grated apple
- a handful of chopped walnuts
- 2/3 cup of oil
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- a pinch of cinnamon
- a pinch of salt
Custard:
- 4 spoons of peanut butter
- 4 spoons of icing sugar
- 250 g of mascarpone cheese
- ½ cup of whipping cream
- chopped walnuts for decoration
Start with preparing the pastry. Sieve the flour and mix it with cinnamon, baking powder, baking soda, walnuts and salt in the bowl. Whip the eggs with sugar until you get a delicate and soft mixture. Next, while still whipping, pour the oil slowly. Add the carrots, apple and mix everything together. To such a prepared mixture add flour with spices and mix all the ingredients well. Do it softly. Pour the pastry to a covered with grease cake tin. Bake at 170ºC for around 45-50 minutes. Check whether the cake is ready with a stick. When it’s dry, it means that it’s done.
Next prepare the custard. Whip cold whipping cream. Cream the mascarpone cheese with icing sugar and peanut butter, until you get a smooth and soft mixture. Mix it with the earlier whipped cream. Cool such a prepared custard in the fridge.
Cut the cooled down cake into two pieces. Spread half of the custard on one of the pieces. Spread the rest of the custard on the top and sides of the second piece. Sprinkle the whole cake with chopped walnuts. Bon Appetit!
