There’s no better season for healthy eating than summer, of course, we should remember about our health all year long, but definitively beautiful weather and sunny days is a time when we want to make use of the abundance offered by our generous Mother Nature. I’m not much into light breakfasts, and especially during the school year, when I start to feel hungry even before starting my work, despite the fact that I had my meal not even an hour earlier. Probably, in my case, it’s a kind of stress accompanying my work. During summer holidays, just on the contrary, light breakfasts do really well and can become an important component of your diet. Today, I’d like to present you a wonderful and very simple in preparation recipe for yogurt with granola, apricot and blueberry found in one of the books written by the Nun Mary titled ‘Dbaj o serce. Jedz zdrowo!’.
Ingredients:
- 1 glass of natural yogurt
- 2-3 tablespoons of granola
- 2 apricots
- a handful of blueberries
- 1 teaspoon of honey (not necessarily)

Preparation:
Wash the apricots carefully, remove the stones, cut their flesh into segments. Rinse the blueberries under running water and drain them in a sieve or on a paper towel. In this recipe I decided to use blueberries in syrup, which I just happened to have at hand. Mix yogurt with honey (not necessarily) and pour it into a glass bowl or a cup. Sprinkle it with granola. Put segments of apricot on granola, and sprinkle everything with blueberries. Serve at once, so that granola doesn’t become squishy and let it preserve its crispiness.


I hope that you’ll also become a fan of this delicious and healthy breakfast. To make it more fit you can use granola, which doesn’t contain sugar, however, I have a sweet tooth, so I took a risk and I decided on something that would satisfy my picky palate! Bon Appetit!
