With passion in your kitchen, no-bake cherry cheesecake

Passion Piece - No-bake cherry cheesecake

Summer, summer, summer! Admittedly it’s still here, but I’m slowly preparing myself for its tearful farewell! What’s the best way to ease this sorrow? In my case the most reliable way, which always works out, is chocolate and everything that contains chocolate … however, today I’m going to propose something slightly different from my usual habit! Well, what is it? Of course, you’ll get to know that in a moment!

I had some ambitious plans … oh yes, they were really ambitious … namely, I was going to learn the culinary arts, however since my enthusiasm lasts as long as the way of a shooting star in the dark night sky, and my mum’s food is pretty tasty … well … my dear future husband you still won’t have a full tummy with me!

Today I’d like to present you a recipe, which is quite easy and really perfect for these warm summer days. Cheesecake in any form has been one of my favourite cakes since I was a little girl. Holidays favour everything that can be served cold, that’s why today’s dessert will also be like this. No-bake cherry cheesecake according to Nun Mary, that’s it!

Ingredients:

  • 500 g of natural fromage frais
  • 1 packet of vanilla pudding
  • 1,5 glasses of milk
  • 8 spoons of sugar
  • 3 teaspoons of gelatin
  • several sponge biscuits
  • 300 g of cherries
  • 1 spoon of cherry jelly in powder

Portions:

  • 6

Preparation:

Soak the gelatin in a few spoons of cold water. Boil milk with three spoons of sugar in the pot. Next, pour the pudding into the milk and stir everything carefully. Take the pot from the burner and cool down the pudding. Warm up the gelatin a little bit so that it melts and pour it into the pudding. Add fromage frais to such a prepared mixture and whip everything carefully using blender or mixer.

Put the sponge biscuits at the bottom of cups or glasses Next, put the cheese mixture on the biscuits and put your desserts into the fridge to set.

Wash the cherries carefully and stone them. Next, put your fruit in the pot with a thick bottom. Warm up the cherries on a low heat until some of the juice evaporates. Add five spoons of sugar and keep boiling for a while. At the end pour the cherry jelly. Mix the fruit with jelly carefully and take the mixture from the burner. Leave it to cool down.

Put the cherry mixture on the earlier prepared cheesecakes. You can serve this dessert at once or leave it for a while to cool down in the fridge.

    I like these no-bake cheesecakes because it's not much of a hassle to prepare. If only cherries were available in our city, would love to make this. Looks so yummy!

      You're right it's much easier to prepare no-bake cakes. Hope you'll find some cherries but I guess you could use different seasonal fruit too. :)
