With passion in your kitchen, creamy dessert with fruit

Passion Piece - creamy fruit dessert 8

Summer allows us to enjoy the abundance of nature in the shape of wonderfully smelling and ripe seasonal fruit. I love homemade desserts and preserves out of strawberries, raspberries or blueberries. Having free time encourages us to prepare light desserts at home. Today I’d like to present a light creamy dessert with fruit.

Ingredients:

  • 500 g of fresh raspberries
  • 30o g of fresh blueberries
  • 2 table spoons of fine white sugar
  • 250 ml of heavy cream (30%)
  • 150 g of mascarpone cheese
  • 3 table spoons of icing sugar
  • 1 packet of vanilla sugar
  • 1 glass of favourite crushed multi-grain cookies

Decoration:

  • roasted coconut
  • fruits in pieces

Portions:

  • for 6 people

Preparation time:

  • around 30 min

Preparation:

Wash and carefully drain the fruit.

Mix half of raspberries with 2 table spoons of fine white sugar.

Chill the heavy cream well, then whip it with a mixer until you get fluffy mass. At the end of whipping add icing sugar and vanilla sugar. Next add mascarpone cheese to the whipped cream and continue whipping until you get homogeneous fluffy cream.

Put the crushed cookies at the bottom of the dish in which you’re going to serve your dessert. On the top of crushed cookies put a little bit of raspberry mousse and some raspberries and blueberries in pieces.

On the layer of fruit spread whipped mascarpone cream. On the cream put the rest of raspberry mousse.

On the top layer of your dessert you can put the rest of your fruit and sprinkle it with roasted coconut for decoration. Before serving chill the creamy dessert in the fridge.

This dessert is not only delicious, but it also looks very nice. I recommend preparing it for your family and friends for different occasions and without any occasion.

This recipe and many more you’ll find in Nun Maria’s book ‘Desery i dania na słodko’.

See you around!

Yours,

Passion Piece

This looks so delicious and it's perfect for the summer. I love to bake in the winter but the desserts definitely fall off in the summer because of the heat. Great recipe!
